Ingredients:

  • 1/2 cup raw spinach
  • 1/2 cup raw mushrooms
  • 1/2 tsp olive oil
  • 1/3 cup tofu
  • 1/2 tomato

Directions:

  1. Wipe pan with olive oil, pour eggs and cook. in seperate pan saute veggies with a little olive oil. when eggs are ready pour veggies on 1/2 of a side. fold over and serve
