Vegetarian (Or Not) Sausage and Sweet Potatoes

Ingredients:

  • 1 (10 oz) box boca vegetarian italian sausages (or aprox 10oz regular sausage)
  • 2 sweet potatoes (aprox 4 cups when sliced after cooking)
  • 2 tbsp brown sugar
  • 1 tbsp flour
  • 1/4 tsp cinnamon
  • 1/4 tsp salt
  • 1/8 tsp ground cloves
  • 1/4 cup water

Directions:

  1. Peel and cut sweet potatoes into large chunks.
  2. Boil in salted water until not quite done.
  3. Drain potatoes, set aside to cool a bit.
  4. Peel, core and slice your apples.
  5. Slice your sweet potatoes (like you would for scalloped potatoes).
  6. Defrost and slice your sausages into coins.
  7. Add potatoes, apples and sausage to a casserole dish that was lightly sprayed with non stick cooking spray.
  8. Now combine the brown sugar, flour, spices and water.
  9. Pour over top, give it all a quick toss.
  10. Bake at 350 for about 25 minutes.
  11. Note - I'm sure you could sub your favorite vegetarian/vegan sausages for this.I just happened to use the Bocas.
