Valley Chocolate Pecan Pumpkin Loaf

Ingredients:

  • 1/2 cup pecan pieces
  • 1/2 cup miracle whip
  • 1/4 cup milk
  • 1/2 cup packed brown sugar
  • 2 eggs
  • 2 tsp cinnamon
  • 1/2 tsp ginger

Directions:

  1. Place pecan pieces on a baking sheet in a 350F oven, and toast for 3-5 minutes, or until golden; you will start to smell a nutty flavor.
  2. Combine Miracle Whip, milk, pumpkin, sugar and eggs. In a separate bowl, combine remaining ingredients, except chocolate chips and pecan pieces.
  3. Gently fold wet ingredients into dry ingredients. Incorporate well. Then fold in pecan pieces and chocolate chips.
  4. Bake in a 9x5-inch greased loaf pan at 350F for 60-70 minutes. Let stand for 10 minutes. Removed from pan.
