Directions:

  1. Preheat oven to 375.
  2. Combine potatoes, carrots and fruit in an ovenproof casserole dish or baking pan.
  3. Drizzle honey over mixture varying the amount depending on how sweet you like it.
  4. Pour enough orange juice over mixture to cover the bottom with 1/4 juice.
  5. Cover casserole tightly and bake for 1-1/2 hours.
