Twice the Banana Bread

Ingredients:

  • 1 1/2 cups flour
  • 1/2 cup sugar
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 eggs
  • 1 1/2 cups mashed ripe bananas (2-3) or 3 (4 oz) jars banana baby food
  • 1/4 cup oil
  • 1/4 cup cold water
  • 1 cup walnuts, chopped (optional)

Directions:

  1. Heat oven to 350 degrees.
  2. Mix flour, sugar, baking powder, baking soda and salt in a large bowl.
  3. Beat eggs in a small bowl.
  4. Stir in the bananas, oil and water.
  5. Add to the dry mixture.
  6. Stir until just moistened (it will be lumpy).
  7. Stir in the cereal and nuts.
  8. Pour into greased 9x5 loaf pan.
  9. Bake 55 to 65 minutes or until toothpick stuck in center, comes out clean.
  10. Cool 10 minutes.
  11. Remove from pan.
  12. Cool completely on wire rack.
