Twice Baked Potatoes

Ingredients:

  • 2 tbsp butter
  • 1/4 cup sour cream
  • 1/4 cup milk
  • 4 slices bacon, diced
  • 1/2 small onion, diced

Directions:

  1. Bake the potatoes in a 400F oven for one hour or until done.
  2. While the potatoes are baking, cook the bacon until crisp. Just before the bacon is done, add the onion and finish cooking.
  3. Cut each potato in half and scoop out the inside. Combine the potato and all the rest of the ingredients except the cheddar cheese in a mixing bowl. Mash or mix on high until the mixture is smooth. Add salt and pepper to taste. If the potato mixture is too loose, add instant mashed potatoes to tighten it up.
  4. Spoon the potato mixture back into 4 of the potato skins. Cover each with shredded cheese and place in a broiler until the cheese is melted and beginning to brown. Serve immediately.
