Turkey, Brie, and Apricot Quesadilla

Ingredients:

Directions:

  1. Lay out four tortillas.
  2. Top each tortilla with brie, turkey, preserves, and cheese.
  3. Top with remaining tortillas.
  4. In a bowl, toss herbs with lemon juice, salt, and pepper; set aside.
  5. In a large skillet over medium heat, spray with non-stick spray and cook quesadilla on both sides for 2-3 minutes, or until golden brown.
  6. Serve hot topped with mixed herb salad.
  7. Enjoy!
