Tomato-Pumpkin Soup

Ingredients:

  • 1/2 medium onion, diced
  • 1 cup tofu
  • 2 small carrots
  • 2/3 large bell pepper
  • 1 1/3 cup pumpkin
  • 3 1/2 cup (1 can, cups adjusted for inconsistency in calories) tomatoes, diced

Directions:

  1. Cook onions in 2 tbsp of broth (garlic optional)
  2. Add carrots
  3. Add napa cabbage stems
  4. Add rest of broth, wait for boil
  5. Add peppers and tofu
  6. Add tomatoes
  7. Stir in pumpkin
  8. Spice to taste (cayenne pepper)
