Tomato, Goat's Cheese and Olive Gratin Recipe

Tomato, Goat's Cheese and Olive Gratin

Ingredients:

  • 1 1/2 cups tomato sauce
  • 4 medium tomatoes
  • 2 (100 g) packages soft rindless goat cheese

Directions:

  1. Heat the oven to 180*C.
  2. (350*F).
  3. Spread two thirds of the tomato compote over the base of an 9 by 8 inch baking dish.
  4. Sprinkle over 1 tsp of the thyme.
  5. Slice the tomatoes and goats cheese, then arrange in rows on top of the compote.
  6. Scatter over the remaining thyme and the olives.
  7. Spoon over the remaining compote.
  8. Bake for 10 minutes, then pop the gratin under a hot grill until golden.
