Tomato Egg Scramble

Ingredients:

  • 10 eggs
  • 2 1/2 cups tomatoes
  • 3 tbsp oil
  • 1 tsp cinnamon
  • 1 tsp turmeric
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 cup olive
  • 1/2 cup feta
  • 1 tbsp olive oil

Directions:

  1. Mix salad and let set while cooking eggs.
  2. In pan heat oil.
  3. Add tomatoes cook until mushy.
  4. In bowl whisk egg and spiced until blended.
  5. Add eggs to tomatoes and with wooden spoon stir until set
  6. Serve with salad.
