Ingredients:

  • 4 eggs
  • 1 package owen''s hot sausage
  • 2 small potatoes

Directions:

  1. Cut up potatoes into chunks. Put a little oil in skillet and add potatoes, salt and pepper. Cook until golden brown and soft inside. (Sometimes I use frozen – they work just as well.)
  2. Cook sausage as directed on package. Cut up into bite size pieces.
  3. In a medium sized bowl put in some potatoes and sausage. Sprinkle with grated cheese.
  4. Fry two eggs over easy (when you cut into the eggs the yoke seeps down and makes everything very creamy and yummy) and place on top of the potatoes and sausage. Sprinkle with a little more cheese. Continue for as many people you are serving.
  5. Serve with a side of salsa for extra flavor.
