Tequila - Chipotle- Shrimp

Ingredients:

Directions:

  1. In a small food processor , combine the chipotles, tequila, lime juice, ketchup, adobo, garlic, brown sugar and salt
  2. Process until smooth
  3. Put the shrimp in a nonreactive bowl
  4. Pour the mixture over them and marinate at room temperture for 30 minutes
  5. Transfer the shrimp to a strainer, letting any excess marinade drip back into the bowl reserve the marinade..............
  6. Set a heavy skillet over high heat and heat until very hot
  7. Add the oil and swirl to coat the skillet
  8. Add the shrimp and cook tossinf and stirring just until cooked through but still moist about 2 minutes
  9. Transfer to a serving dish
  10. Add the marinade to the pan and bring to a boil scraping the pan often cook 15 seconds longer.
  11. Pour the sauce over the shrimp and serve immediately.............
  12. Serve 4 to 6
