Tasty Tuna Rice Bake

Ingredients:

  • 200 g long grain brown rice
  • 2 (200 g) cans tuna
  • 1 vegetables , stockcube
  • 1 (400 g) can tomatoes
  • 80 g carrots
  • 1/2 tsp garlic powder
  • 1/2 tsp ginger
  • salt and pepper
  • 2 slices brown bread
  • 800 ml water

Directions:

  1. Preheat the oven to 200c.
  2. In a saucepan bring to the boil the water,add stock cube then rice.then add carrots so they soften.
  3. Once 1/2 the water has been absorbed, add the chopped tomatoes and tuna,ginger and garlic plus pepper,leave to reduce for another 10mins.
  4. Whilst that boils,chop the onions and place in the bottom of a cassarole dish,season with salt and pepper and place in the oven to crisp for 8mins.
  5. Remove the pan from the heat and pour ontop of the onions in the arrole dish,return to the oven till all the liquid is absorbed.
  6. Once this has happened crumble bread on top and season with salt and pepper.
