Swiss Chicken Bake

Ingredients:

  • 1 1/2 lb chicken tenders
  • 2 eggs
  • 1/2 cup milk
  • salt and pepper to taste
  • 12 oz. slice swiss cheese
  • 1/3 cup oil
  • 1/2 stick butter
  • 4 tbsp butter
  • 1/4 cup flour
  • salt and pepper to taste
  • 2 1/4 cups milk

Directions:

  1. In med. size bowl, whisk together milk and egg.
  2. Place bread crumbs in another bowl.
  3. Dip egg in egg wash and then in bread crumbs
  4. Heat oil in frying pan.
  5. Brown chicken tenders a few at a time,adding more oil if needed.
  6. Drain on paper towels.
  7. In saucepan, heat butter
  8. Stir in flour
  9. Slowly stir in milk.
  10. Continue stirring while cooking until thick
  11. Stir in white wine and remove from heat.
  12. Season sauce with salt and pepper to taste
  13. In a frying pan, saute mushrooms in butter until lightly brown.
  14. Preheat oven to 350
  15. Spray a 12 x 9 pan or large oven safe casserole dish with non stick baking spray or you can butter pan
  16. Place chicken in pan,
  17. Spoon mushrooms over chicken
  18. Pour sauce over chicken and mushrooms
  19. Top with swiss cheese.
  20. Bake for 35 to 40 minutes
