Sweet Potatoes with Sage and Parmesan Cheese

Ingredients:

Directions:

  1. Preheat oven to 400 degrees.
  2. Melt 2 tablespoons of the butter.
  3. Place potatoes in a 13-by-9-inch baking dish.
  4. Stir in butter, being sure to coat the potatoes well to prevent discoloration.
  5. Bake potatoes for 20 minutes, or until fork tender.
  6. In a heavy skillet over medium-low heat, melt remaining butter.
  7. Add sage.
  8. Pour butter mixture and 1 cup Parmesan cheese over potatoes.
  9. Stir well.
  10. Add salt and pepper to taste.
  11. Cover dish with aluminum foil.
  12. Bake for another 20 minutes.
  13. Sprinkle with remaining 1/2 cup Parmesan before serving.
