Sweet Potatoes Twice Baked Pecan-Crust

Ingredients:

Directions:

  1. Wash and Bake the sweet potatoes in the oven at 350 for 1 hour or until soft. Remove from oven and place on a baking pan. When they are cool enough to handle, cut a 2 inch slice off the top of each potato and scoop out the soft insides to a bowl.
  2. Add butter and vanilla mixing well then add 1 cup of the brown sugar. (Adjust the the filling to your desired sweetness). Add 3/4 cup of the crushed pecans, mix well and spoon back into the potato shells.
  3. Mix the remaining pecans with a equal part of brown sugar and pack on top of the potato. Return to the oven at 350 for 15 minutes or until brown sugar on top is bubblt.
