Marshmallow Sweet Potatoes

Ingredients:

  • 2 1/2 lbs sweet potatoes
  • 4 tbsp butter
  • 1/4 cup maple syrup
  • 2 tbsp brown sugar
  • 1/3 cup pecan halves
  • 1 1/2 cups mini marshmallows

Directions:

  1. Spray 8x8 baking dish with nonstick cooking spray.
  2. In a 3 qt saucepan,place sweet potatoes and water to cover; heat to boiling.
  3. Reduce heat, cover and simmer 25-30 mins or until tender.
  4. Drain potatoes and cool slightly.
  5. Peel and cut into large chunks, place in prepared 8x8 dish.
  6. Preheat oven to 350.
  7. In a small saucepan melt butter, stir in syrup and sugar over low heat stirring 3-5 mins until blended.
  8. Sprinkle nuts over sweet potatoes then top with syrup mixture.
  9. Bake 25 minutes.
  10. Top with marshmallows.
  11. Bake 5-7 minutes.
