Sweet Potato Pancakes

Ingredients:

  • 1 1/2 cup flour
  • 3 tbsp sugar
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 1/2 cup milk
  • 3 tbsp butter
  • 2 eggs

Directions:

  1. Mix all dry ingredients. Mix all wet ingredients.
  2. Stir wet into dry until lumps are broken up and let rest for 5 - 10 minutes.
  3. Cook on griddle until brown like regular pancakes.
