Sweet Potato Pancakes

Ingredients:

  • 2 eggs
  • 1 tsp salt
  • 1 tsp pepper

Directions:

  1. Peel and grate 2 sweet potatoes.
  2. Mince one vidalia onion.
  3. Mix the potatoes, onion, eggs, flour, salt, and pepper.
  4. Drop the mixture into a small, lightly greased pan.
  5. Cook each side of the pancake for 2 minutes.
  6. Enjoy! :)
  7. If you'd like, while the other pancakes are cooking, place the finished 'cakes in a 300 degree onion on a lightly greased cookie pan to keep them warm.
