Ingredients:

  • 1 1/2 cup sugar
  • 11/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 2 eggs
  • 1/2 cup canola oil
  • 1/3 cup water

Directions:

  1. Preheat oven to 350. In a large bowl, combine the flour, sugar, cinnamon, nutmeg, baking soda, baking powder, and salt and mix well. In a small bowl, combine the eggs, sweet potatoes, oil and water. Stir into the dry ingredients just until moistened. Spoon into a greased and floured 9x5-inch loaf pan. Sprinkle vanilla sugar over the top of the loaf. Bake at 350 for 50-60 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from the pan to a wire rack.
