Sweet Potato Bread

Ingredients:

  • 1 3/4 cups all-purpose flour
  • 1 1/2 cups sugar
  • 1 1/2 tsp cinnamon
  • 1/2-1 tsp ground nutmeg
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 2 eggs
  • 1/2 cup canola oil
  • 1/3 cup water
  • 1 -2 tsp vanilla sugar

Directions:

  1. Preheat oven to 350.
  2. In a large bowl, combine flour, sugar, cinnamon, nutmeg, baking soda, baking powder and salt.
  3. Mix well.
  4. In a small bowl combine eggs, sweet potato, oil and water.
  5. Stir into dry ingredients until just moistened.
  6. Spoon into a greased and floured 9x5 loaf pan.
  7. Sprinkle vanilla sugar over the top.
  8. Bake at 350 for 50-60 mins or until toothpick inserted in comes out clean.
  9. Cool for 10 min before removing from pan to a wire rack.
