Ingredients:

Directions:

  1. In a big bowl, combine the first 7 ingredients.
  2. In another bowl, whisk together the sweet potatoes, eggs, and oil.
  3. Add sugar, whisk until smooth.
  4. Stir into the dry ingredients just until combined.
  5. Fold in walnuts and raisins (batter will be thick).
  6. Transfer to two greased 9x5 inch loaf pans.
  7. Bake in a preheated 350° oven for 65-70 minutes or until a pick comes out clean.
  8. Cool in pans for 10 minutes before removing to wire racks.
  9. Meanwhile, combine powdered sugar, orange peel, and enough orange juice to achieve the desired consistency.
  10. Spread over the warm loaves; sprinkle with walnuts.
