Sweet Bell Pepper Relish

Ingredients:

  • 13 cups diced multicolored bell peppers
  • 6 cups diced onions
  • 2 1/2 cups sugar
  • 1 tbsp salt

Directions:

  1. In a large pot, combine all ingredients.
  2. Bring to a boil, cover and simmer for 20 minutes.
  3. Pour hot mixture into hot, sterilized, canning jars, leaving 1/4-inch space.
  4. Adjust lids.
  5. Process for 15 minutes in a boiling-water bath.
