Sweet and Sour Pearls (Onions)

Ingredients:

  • 8 cups white pearl onions (4 10 oz packages)
  • 1 cup water
  • 1 cup raisins
  • 2 tbsp olive oil
  • 1 tbsp tomato paste
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 garlic clove, slivered
  • 1 tbsp cornstarch
  • 2 tbsp water

Directions:

  1. Cover onions with boiling water in a heatproof bowl and let stand for 30 seconds.
  2. Drain and peel.
  3. Combine onions, orange rind, bay leaf, 1 cup water, raisins, oil, vinegar, tomato paste, salt, pepper and garlic in slow cooker (slow cooker should be 1/2 to 3/4 full).
  4. Cover and cook on low for 6 hours or until onions are tender.
  5. Discard bay leaf.
  6. Mix cornstarch with 2 tbsp water and stir into slow cooker.
  7. Cover and cook on high for 10 minutes or until thickened.
