Ingredients:

Directions:

  1. Spray medium baking dish.
  2. Preheat oven to 350 degrees.
  3. Slice sweet potatoes in 1/4 inch slices.
  4. Arrange sweet potatoes in baking dish.
  5. Combine orange juice, brown sugar, orange rind, water, butter, and salt.
  6. Pour evenly over sweet potatoes.
  7. Sprinkle on nuts, if desired.
  8. Cover and bake, basting occasionally, until potatoes are tender, approximately 30 minutes.
  9. Remove lid during last 10 minutes of baking and may sprinkle over marshmallows at this time if desired.
