Ingredients:

  1. Coat a 13 x 9 inch baking with cooking spray.
  2. Cook sausage in a large nonstick skillet over medium heat, crumbling with a wooden spoon, until lightly browned, about 3-4 minutes.
  3. Transfer to a plate lined with paper towels to drain.
  4. Add onion and bell pepper to the skillet; cook, stirring often, until softened, 3-4 minutes.
  5. Whisk eggs, milk, salt, and pepper in a bowl, until blended.
  6. Spread bread in the prepared baking dish.
  7. Scatter sausage and the onion mixture evenly over the bread.
  8. Brush with the mustard.
  9. Sprinkle with cheese.
  10. Pour in the egg mixture; cover with plastic wrap and refrigerate for at least 2 hours or overnight.
  11. Preheat oven to 350°; bake the strata, uncovered, until puffed, lightly browned, and set in the center, 55-65 minutes.
  12. Let cool for about 5 minutes before serving hot.
