Summer Delight: Curry Chicken Salad

Ingredients:

  • 4 1/2 cups cooked and cubed chicken (i use deli chicken that i skin and bone)
  • 1 cup currants
  • 1/2 cup slivered almonds
  • 1 cup mayonnaise
  • 1 -2 tbsp curry powder (to taste)
  • salt and pepper

Directions:

  1. Combine mayo, curry powder, and chutney.
  2. Stir until smooth.
  3. Mix dressing with chicken, scallions, currents and almonds.
  4. Season to taste.
  5. Chill for 1 hour. Serve cold over a bed of lettuce.
