Ingredients:

Directions:

  1. Slice tomatoes in half then the halves in quarters
  2. Add garlic, salt and pepper to taste and drizzle with olive oil
  3. Mix to coat and spread on a large cookie sheet
  4. Cook in oven at 225 degrees for 2 hours or until carmelized
  5. Remove from oven
  6. Take baguette lengths and spread basil ontop ( I love basil so I use a lot)
  7. Layer still warm tomatoes on top of basil leaves
  8. Heat inlow oven ...about 225 for 20 minutes
  9. Remove from oven
  10. Take a potato peeler and grate cheese in slices (again be generous)
  11. Drizzle with olive oil
  12. Salt and pepper to taste.
  13. Cut into fairly thick pieces
  14. I sometimes grill the bread first if we are bbqing....adds a nice flavour!
