Sultana Loaf (Edmonds Cookbook)

Ingredients:

  • 1 cup sultanas
  • 1 tbsp butter
  • 1/2 cup sugar
  • 1 tbsp golden syrup
  • 1/4 tsp salt
  • 2 cups plain flour
  • 1 1/2 tsp baking powder

Directions:

  1. Sultanas, butter, sugar, syrup, salt - into bowl.
  2. Sprinkle baking soda over.
  3. Add water.
  4. When butter melted, sift in flour and baking powder.
  5. Mix quickly.
  6. Pour into 22cm greased loaf tin and bake at 180 degrees celcius for 40min or until done.
  7. NOTE: - can be a little dry if overcooked so watch carefully. Also 1/2 cup chopped walnuts can be added with sifted ingrediants (will increase calorie count).
