Sue's Sweet Potatoes

Ingredients:

  • 1/2 cup sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1/2 cup milk
  • 1/2 cup brown sugar
  • 1/3 cup flour

Directions:

  1. Bake sweet potatoes at 450 degrees F for 1 hour.
  2. Scoop potato from skins and mash.
  3. Combine potatoes, sugar, eggs, vanilla, milk and butter.
  4. Place in large casserole.
  5. Topping:.
  6. Combine brown sugar, flour, butter and pecans.
  7. Place on top of potatoes in casserole.
  8. Cover casserole.
  9. (This can be made a day ahead up to this point.).
  10. Bake, covered, at 275 degrees F for 40 minutes.
  11. Uncover and bake for additional 10 minutes.
