Ingredients:

Directions:

  1. Preheat oven to 375.
  2. Cut off end of zucchini and slice in half lengthwise.
  3. Scoop out pulp to leave 1/8 shell. Put pulp in mixing bowl and chop up well.
  4. Cook sausage and drain well.
  5. Mix zucchini pulp, mushrooms, and sausage.
  6. Scoop mixture into zucchini shells.
  7. Pour sauce over top.
  8. Place in baking dish. Cover with tinfoil. Make sure tinfoil is tight on pan. If it isn't this will take a long time!
  9. Bake in oven 45 minutes.
  10. Remove from oven, remove tinfoil and sprinkle with cheese.
  11. Bake uncovered 5 minutes or until cheese is melty and bubbly.
