Ingredients:

  • 48 small tomatoes (not cherry type - i used camparis but tested the recipe first with small romas)
  • 1 box yellow rice (i used goya)
  • 1 bell pepper julienned

Directions:

  1. Core and scoop seeds from tomatoes. Put tomatoes upside down on paper towels & refrigerate.
  2. Prepare rice using package directions.
  3. Lightly oil a frying pan, break apart sausage and brown; add onion to sausage and cook briefly.
  4. Drain sausage mixture and add to rice.
  5. Remove tomatoes from refrigerator, lightly salt cavities and stuff with rice mixture. Garnish with a green pepper strip.
