This is one of the hors d'oeuvres we made for my niece's Sept. wedding. It was well received. Everything can be prepared in advance and the assembled at serving time. Ingredients:
48 small tomatoes (not cherry type - i used camparis but tested the recipe first with small romas) |
1 box yellow rice (i used goya) |
1 lb sweet italian sausage (bulk or patties) |
1 small onion diced fine |
1 bell pepper julienned |
olive oil or butter |
Directions:
1. Core and scoop seeds from tomatoes. Put tomatoes upside down on paper towels & refrigerate. 2. Prepare rice using package directions. 3. Lightly oil a frying pan, break apart sausage and brown; add onion to sausage and cook briefly. 4. Drain sausage mixture and add to rice. 5. Remove tomatoes from refrigerator, lightly salt cavities and stuff with rice mixture. Garnish with a green pepper strip. |
