Stuffed Mushrooms for a Crowd

Ingredients:

Directions:

  1. Wash mushrooms and separate caps from stems.
  2. Finely chop stems.
  3. Finely chop onions.
  4. Saute onions in oil until transparent.
  5. Add Stems.
  6. Cook about 5 minutes.
  7. Add 1/2 cup chicken broth.
  8. Simmer until broth evaporates.
  9. Put caps in a baking dish and lightly brush with melted butter.
  10. Salt and Pepper to taste.
  11. Mix all dry ingredients together. (except mozzerella cheese).
  12. Then, stir in the onions and stems.
  13. Add whipping cream until mixture becomes paste.
  14. Fill caps with mixture.
  15. Pour remaining 1/2 cup of chicken broth into baking pan. (This helps the mushrooms stay steamed and not dry out).
  16. Top each with shredded mozzerella cheese.
  17. Bake 15 to 20 minutes at 350 degrees.
  18. Serve and enjoy.
