Strawberry Salad With Cinnamon Vinaigrette

Ingredients:

  • 1/3 cup olive oil
  • 1 tbsp sugar
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1/4 tsp pepper
  • 1 pint strawberry
  • 1 (11 oz) can mandarin oranges
  • 1/2 cup pecans

Directions:

  1. Mix first 7 ingredients well to make vinaigrette and chill at least 1 hour.
  2. Lightly toast pecans - cool.
  3. Wash, hull, and quarter strawberries.
  4. Drain chilled mandarin oranges.
  5. Tear romaine into bite size pieces
  6. Slice avocado.
  7. Place romaine,oranges,strawberries,pecans, and avocado slices in salad bowl.
  8. Drizzle with no more than 1/2 of well shaken vinaigrette.
  9. Toss gently and serve immediately.
  10. Serve the remaining vinaigrette on the side.
  11. The vinaigrette can be made a day ahead - the salad can be made 3 to 4 hrs ahead of time omitting the avocado and vinaigrette until serving time.
