Ingredients:

Directions:

  1. Preheat oven to 375 F.
  2. Spray 8 holes of a 12 hole muffin pain with cooking spray or line with muffin cups.
  3. In a large bowl, combine flour, dry pudding mix, sugar twin, baking powder, and baking soda.
  4. Stir in stawberries and walnuts.
  5. In a small bowl, combine applesauce, vanilla extract, egg, and skim milk.
  6. Add applesauce mixture to flour mixture.
  7. Mix just until combined.
  8. Spoon batter in to muffin pan.
  9. Bake for 20 to 25 mins.
  10. Let stand for 5 mins and remove from pan.
  11. Freezes well.
