Ingredients:

  1. Preheat broiler. Place peppers on a broiler pan. Broil 4 in. from heat until skins blister, about 5 minutes. With tongs, rotate peppers a quarter turn. Broil and rotate until all sides are blistered and blackened. Immediately place peppers in a large bowl; let stand, covered, 20 minutes.
  2. Peel off and discard charred skins. Remove stems and seeds. Place peppers in a food processor. Add oil, vinegar, anchovies and thyme; process until blended.
  3. For beef, mix oil, paprika, thyme, salt and pepper; rub over beef. Grill, covered, over medium heat or broil 4 in. from heat for 4-5 minutes or until meat reaches desired doneness, turning once. Thread beef onto appetizer skewers. Serve with red pepper sauce. Yield: 16 appetizers (2 cups sauce).
