Green Beans With Mushrooms And Red Peppers

Ingredients:

  • 2 lb of frozen or fresh green beans
  • 1 (4 oz) can drained mushrooms
  • 1 large red pepper , cut in fatter juliene strips
  • 6 tbsp olive oil
  • 2 tbsp butter
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp italian seasoning
  • 1/2 tsp thyme
  • 1/2 cup bread crumbs

Directions:

  1. In frying pan, melt butter & olive oil
  2. Add onion, garlic, mushrooms, & red pepper slices, saute about 3-5 minutes but do not over cook
  3. Add seasonings and mix
  4. In a 9 x 13 pan add either fresh or frozen beans (do not cook ahead )
  5. Pour butter/onion mixture over beans and toss to coat all (add a little more oil is too dry, (do not over oil))
  6. Top with bread crumbs
  7. Bake uncovered about 30-45 minutes (till beans are tender but not overcooked)
