Ingredients:

Directions:

  1. Heat oven 160 C.
  2. Grease and line 20 cm round tin.
  3. Put dates in bowl and cover with boiling water.
  4. Melt butter in pot, stir in sugar, allow to cool.
  5. Add eggs and ginger to pot.
  6. Drain dates and add to pot.
  7. Stir in flour, then spoon mixture into cake tin.
  8. Bake 50 - 60 minutess - a skewer stuck into cake should come out with a few moist crumbs sticking to it.
  9. Leave to cool in tin.
