Ingredients:

Directions:

  1. Combine flour, salt,egg, milk and 1/4 cup water in blender until smooth.
  2. In a heavy bottomed saucepan combine sugar, Tb water and 1 Tb oil.
  3. Cook over low heat until sugar dissolves.
  4. Bring to boiling and cook rapidly without stirring until a pale caramel color.
  5. While sugar is dissolving, heat oil for frying.
  6. Dip a few pieces of fruit in the batter, and drop into the hot oil.
  7. Fry until crispy and golden.
  8. While fruit is still hot and crisp, use tongs to quickly dip fruit into hot caramel syrup. Stir to coat evenly.
  9. Dip immediately into ice water to harden the syrup.cool completely before serving. fruit inside remains hot for awhile.
