Directions:

  1. In heavy skillet sauté onions in moderately hot oil until golden then stir in tomatoes and pepper.
  2. After 2 minutes add spinach, salt and hot pepper then cover and simmer five minutes.
  3. Thin peanut butter with several tablespoons of warm water to make a smooth paste.
  4. Add to the pot then continue cooking 15 minutes stirring frequently being careful not to scorch.
  5. Add small amounts of water as necessary so stew does not stick to the pan.
