Ingredients:

Directions:

  1. Chop red pepper, green onion, and mushrooms
  2. Drain spinach well and break apart
  3. Spray bottom of pie pan with pam
  4. Line pan with 1/2 spinach
  5. Mix eggs with chopped vegtables, remaining spinach and cottage cheese
  6. Pour into pie pan
  7. Bake in 350 degree oven for 40 minutes
