  1. Make pizza dough: Sprinkle yeast over really warm water with maybe a pinch of sugar and allow to set until it begins to foam or about 5 minutes.
  2. Stir in salt and olive oil. If you like you can add a few sprinkles of parmesan, oregano, or garlic powder at this point to add flavor to the dough. Then mix in flour 1 cup at a time using hands to make into dough.
  3. Knead 8-10 minutes by using hands to fold over and mush down dough repeatedly until smooth and elastic. Place dough in greased bowl and let rise until double (for 30 to 60 minutes) on top of heated oven. Punch down dough and let it rise AGAIN until doubled in size (another 30 to 60 minutes).
  4. Punch down one last time and divide into 2 balls. If you like you can sprinkle some cornmeal, herbs, or a little parmesan on the cookie sheets. Pat out into two 10 inch circles one on each cookie sheet on top of heated oven.
  5. Mix pizza sauce ingredients together with fork. Pour and spread half of pizza sauce on one pizza and the rest on the other pizza.
  6. Add toppings: Spread 4 oz spinach (defrosted) on each pizza. If desired sprinkle 1/2 cup of shredded mozzarella cheese on each pizza. WAY LESS CALORIES if you leave it out and still tasty! If desired, sprinkle red pepper flakes over pizzas for hot spicy flavor and/or a little parmesan.
  7. Bake at 375 F for about 15 to 20 minutes or until cheese is melted and crust is at desired crispness.
