Spicy Tofu Sandwich

Ingredients:

Directions:

  1. Drain and press tofu.
  2. Cut tofu lenthwise into two pieces.
  3. Coat pan with cooking spray and heat over medium heat.
  4. Add tofu to pan and sprinkle liberally with cajun seasoning.
  5. Cook until crispy and browned.
  6. Serve on toasted bread with mustard, baby spinach leaves and red onion slices.
