Spicy Red Beans and  Rice

Ingredients:

  • 1/2-1 lb hamburger
  • 15 oz red beans
  • 6 oz medium salsa
  • 6 garlic cloves
  • 1/2 cup chopped onion
  • 2 tbsp olive oil
  • 1 cup rice (cooked )

Directions:

  1. Sautee onion and garlic lightly in olive oil
  2. While sautéing begin cooking rice and browning burger.
  3. Add beans (undrained) and cayenne to onion and garlic, allow to cook 5-7 minutes or until lightly thickened.
  4. Add salsa and hamburger to mixture and allow to cook another 5-7 minutes to mix flavors and thicken a little more.
  5. Once thickened to your liking pour over rice and enjoy!
  6. *You could add some tomato paste if you wanted a little more sauce*.
