Spicy Gammon and Bean Hot Pot

Directions:

  1. SPRAY a large saucepan with low fat cooking spray (or olive oil) and cook the gammon over a high heat for 2-3 minutes.
  2. ADD the remaining ingredients and bring to the boil.
  3. REDUCE the heat, cover and simmer for 20 - 25 minutes, until the leeks and carrots are cooked.
  4. SERVE hot.
