Spicy Carrot Peanut Soup

Ingredients:

Directions:

  1. Cook the carrots, peppers, and onions in some olive oil in a pot until mushy.
  2. Add the peanut butter, mix to distribute evenly.
  3. After adding around a cup of water or stock, blend all of that stuff in a blender.
  4. Return to pot,.
  5. Add lime juice.
  6. Simmer for 30 minutes.
  7. Once the soup has reached desired thickness, add the herbs and spices, and a little bit more black pepper.
  8. Serve hot with croutons or crackers.
