Spiced Orange Cranberry Mini Muffins - Whole Grain

Ingredients:

  • 1 cup oats
  • 1/3 cup honey
  • 1/3 cup brown sugar
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup craisins
  • 2 eggs
  • 1/4 cup butter
  • 3/4 cup orange juice
  • 1 tsp vanilla
  • 1/4 tsp ground cloves
  • 1/4 tsp allspice
  • 2 -3 tbsp milk
  • 1/4 tsp vanilla
  • 1/4 tsp ground cloves

Directions:

  1. Preheat oven to 350 degrees. Line mini muffin pan with liners. Silicone are best.
  2. Mix flour, oats, salt, baking soda, baking powder, Add craisins, zest of clementine and diced clementine. In a separate bowl, melt butter and blend with honey, brown sugar, eggs, orange juice and vanilla. Combine all dry ingredients with all wet ingredients and mix. Fill muffin liners until 3/4 full and bake at 350 degrees for 12-15 minutes or until golden brown, firm to the touch and a toothpick comes out clean. Remove and let cool.
  3. While cooling, whisk together Spiced Orange Glaze ingredients. If using silicone muffin liners, remove from liners. Dip the tops of the muffins in the glaze. Top with a craisin and a bit of orange zest if desired. Let glaze set until firm 5 -15 minutes.
