Spiced Indian Cauliflower Soup

Ingredients:

Directions:

  1. Put the potato, cauliflower and onion into a large pot with the oil and 3 T of water.
  2. Heat until hot and bubbling, then cover and turn the heat down.
  3. Continue cooking the mixture for about 10 minutes.
  4. Add the garlic, ginger, and spices.
  5. Stir well and cook for another 2 minutes, stirring occasionally.
  6. Pour in the stock and season well.
  7. Bring to a boil, then cover and simmer for about 20 minutes.
  8. Stir in the yogurt, season well and garnish with coriander or parsley.
