Ingredients:

Directions:

  1. In large skillet melt butter over medium heat.
  2. Add onions and sauté until translucent then add curry and chili powder and cook 5 minutes longer.
  3. Add apples and half the stock and bring to a boil.
  4. Transfer to a large soup pot and season with salt and pepper.
  5. Bring to a boil then reduce heat and simmer 45 minutes stirring occasionally.
  6. Puree mixture with hand blender until smooth.
  7. Add remaining stock and cream then simmer to heat through.
